Strawberry Salsa with Grain Free Siete Chips!

With Cinco De Mayo around the corner there is no need to miss out on the festivities or stray from clean eating. TO celebrate, I've made a Strawberry Salsa with fresh herbs along side my favorite grain- free chips. If you haven't tried Siete Chips then you are missing out. These chips are incredibly delicious and are made with cassava flour, chia seeds, avocado oil, coconut flour and salt! 

Make It

Ingredients
10 strawberries diced into small pieces
1/3 medium red or white maui onion, finely minced
1 handful of basil , well rinsed and chopped
1 jalapeno pepper, minced and seeds removed
1 juiced lime
fresh cracked black pepper
pink sea salt 

Directions
Mix all the ingredients in a bowl. Taste the salsa and adjust any of the ingredients to your liking. Chill until ready to serve. I recommend making this no more than 1 hour before serving to keep the strawberries looking juicy and plump!

Raw Coconut Cookies and Energy Bites - Watch My Segment

Hallmark's Home and Family is hands down my favorite show to appear on. Mark Steins and Debbie Matenopoulos are so welcoming that it truly feels like I've been invited into someone's home... and that I'm part of their family! For this incredibly fun segment, we make Raw Coconut Cookies and Energy Bites. And the best part is... they are tasty chocolate treats packed with healthy fats and protein. These are perfect for those late night sugar cravings, and you can indulge without the worries of refined sugar, dairy, or gluten! 

Coconut Cookies

Ingredients
1/4 cup of unsweetened coconut milk
3 tablespoons of ghee
3 tablespoons of unsweetened cacao powder
A few drops of monk fruit extract
1/2 tablespoon of vanilla extract
2 cups of unsweetened coconut flakes
1/2 cup of chopped pecans and walnuts

Directions
In a medium pot add coconut milk, ghee, monk fruit extract, cacao and vanilla and bring to a boil for 2 minutes. Then remove from heat. Add coconut flakes and nuts and stir until coated with chocolate. On a sheet of parchment paper lined baking sheet, scoop large spoonfuls onto the sheet. Let cool for 30 minutes. Place in freezer and enjoy when you need something sweet!

Energy Bites 

Ingredients
3 medjool Dates
1 cup of shredded coconut flakes unsweetened
4 tablespoons of coconut butter
4 tablespoons of coconut oil
1/2 cup of raw cashews  
1/2 cup of walnuts
1/4 cup of almond milk or ( hemp, cashew) 
1 tablespoon of raw cacao powder
1 tablespoon of cinnamon

Directions
In a food processor mix all the ingredients until dough begins to form. Put coconut on the palm of your hand. Then roll dough into balls. When hands are slightly damp they are easier to roll. Place bites into a container and freeze. When ready to eat remove from freezer for 5-7 minutes until soft and chewy!
